2 cups mashed potatoes (leftover or freshly made)
1/2 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1 egg, beaten
2 tbsp chopped chives (optional, for garnish)
1/4 tsp garlic powder
Salt and pepper to taste
Olive oil or butter for greasing
Instructions:
Preheat the oven: Set your oven to 400°F (200°C). Grease a muffin tin or line it with parchment paper.
Mix the ingredients: In a large bowl, combine mashed potatoes, shredded cheddar cheese, Parmesan, beaten egg, garlic powder, salt, and pepper. Stir everything together until smooth.
Shape the puffs: Scoop out about 1-2 tbsp of the potato mixture and form into small balls. Place them into the prepared muffin tin.
Bake: Bake for about 20-25 minutes or until the tops of the potato puffs are golden and crispy.
Garnish: Remove from the oven and let cool slightly. Garnish with chopped chives before serving.
