
Ingredients:
1 lb ground beef
4 large potatoes, peeled and thinly sliced
1 cup shredded cheddar cheese
1/2 cup cooked bacon, crumbled
1/4 cup chopped chives
1/2 cup sour cream
2 tablespoons butter
1/4 cup milk
Salt and pepper to taste
Directions:
Prepare the meatloaf layer: Preheat the oven to 375°F (190°C). Brown the ground beef in a skillet over medium heat, seasoning with salt and pepper. Drain excess fat and set aside.
Layer the potatoes: Grease a baking dish. Arrange a layer of thinly sliced potatoes on the bottom of the dish.
Add meat and cheese: Spread half of the cooked ground beef over the potato layer, followed by a layer of cheddar cheese.
Repeat: Add another layer of potatoes, then the remaining ground beef and cheese.
Bake: Cover with foil and bake for 45 minutes until potatoes are tender.
Top with bacon and chives: Remove the foil, sprinkle crumbled bacon and chives on top, and bake for another 10 minutes, uncovered, until the cheese is bubbly and golden.
Garnish and serve: Serve with sour cream on the side and enjoy!
