Sticky Toffee Pudding

Ingredients:
1 1/4 cups dates, chopped
1 cup boiling water
1 tsp baking soda
3/4 cup butter, softened
1 cup brown sugar
2 eggs
1 1/4 cups flour
1 tsp baking powder
1/2 tsp vanilla extract

Toffee Sauce:
1 cup brown sugar
1/2 cup butter
1 cup heavy cream
1 tsp vanilla extract

Instructions:
1️⃣ Preheat the oven to 350°F (180°C) and grease an 8×8 inch baking dish.
2️⃣ In a bowl, pour boiling water over the dates and add the baking soda. Let it sit for 10 minutes.
3️⃣ In another bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs, one at a time, then add the vanilla extract.
4️⃣ Stir in the flour and baking powder until combined. Add the softened date mixture and mix well.
5️⃣ Pour the batter into the prepared baking dish and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
6️⃣ While the pudding is baking, prepare the toffee sauce by combining the brown sugar, butter, and heavy cream in a saucepan over medium heat. Stir until the mixture thickens, about 5-7 minutes. Remove from heat and stir in the vanilla extract.
7️⃣ Once the pudding is done, poke holes all over the top and pour half of the toffee sauce over it while it’s still warm. Serve the remaining sauce on the side or drizzle more over each serving.
