
Ingredients:
1 cup garlic cloves, peeled
1 teaspoon salt
1/2 cup fresh lemon juice
3 cups neutral oil (such as sunflower or canola)
1/4 cup ice water
Directions:
Prepare the garlic: Place the peeled garlic cloves and salt in a food processor. Pulse until the garlic is finely minced, scraping down the sides as needed.
Emulsify: With the processor running, slowly drizzle in the oil, alternating with small amounts of lemon juice and ice water. Do this gradually to allow the mixture to emulsify and create a fluffy, smooth sauce.
Continue blending: Repeat the process of alternating oil, lemon juice, and water until all ingredients are incorporated. The mixture should be thick and creamy.
Serve or store: Transfer the garlic sauce to a container. You can serve it immediately, or refrigerate for up to a week. The flavor intensifies over time!
