Egg Roll in a Bowl

Ingredients:
1 lb ground pork (or ground beef, turkey, or chicken)
1 tablespoon sesame oil
1/2 onion, chopped
2 cloves garlic, minced
1 tablespoon fresh ginger, minced
1/2 cup carrots, julienned
1/2 head of cabbage, shredded
1/4 cup soy sauce (or coconut aminos for a low-sodium option)
1 tablespoon rice vinegar
2 teaspoons sriracha (optional for heat)
1/4 cup green onions, chopped
1 tablespoon sesame seeds

Directions:
Cook the pork: Heat sesame oil in a large skillet over medium heat. Add the ground pork, breaking it up as it cooks. Cook for 5-7 minutes until browned and cooked through.
Add the aromatics: Add the chopped onion, garlic, and ginger to the skillet with the pork. Sauté for 2-3 minutes until fragrant.
Sauté the veggies: Add the shredded cabbage and carrots to the skillet. Stir and cook for another 5 minutes until the veggies soften.
Season: Stir in the soy sauce, rice vinegar, and sriracha (if using). Let the mixture cook for another 2-3 minutes, allowing the flavors to combine.
Garnish and serve: Remove from heat, sprinkle with green onions and sesame seeds. Serve hot and enjoy your deconstructed egg roll!
