Cranberry Pecan Chicken Salad with Poppy Seed Dressing

Ingredients:
2 cups cooked chicken breast, diced or shredded
1/2 cup dried cranberries
1/3 cup pecans, chopped
4 cups mixed greens or spinach
For the poppy seed dressing:
1/4 cup mayonnaise
2 tablespoons Greek yogurt
1 tablespoon honey
1 tablespoon apple cider vinegar
1 teaspoon poppy seeds
Salt and pepper to taste

Directions:
Prepare the dressing: In a small bowl, whisk together the mayonnaise, Greek yogurt, honey, apple cider vinegar, poppy seeds, salt, and pepper. Adjust seasoning to taste.
Assemble the salad: In a large bowl, combine the diced chicken, dried cranberries, and chopped pecans. Toss with the prepared poppy seed dressing until well coated.
Serve: Serve the chicken mixture over a bed of fresh mixed greens or spinach. Garnish with extra pecans and cranberries, if desired.
