Apple Fritter Bites

Ingredients:
2 large apples, peeled, cored, and diced
1 cup all-purpose flour
1/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
Pinch of salt
1/2 cup milk
1 egg
1 teaspoon vanilla extract
Oil for frying
1/4 cup sugar + 1 teaspoon cinnamon for dusting

Directions:
Prepare the batter: In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt. In a separate bowl, mix milk, egg, and vanilla extract. Slowly add the wet ingredients to the dry ingredients, stirring until combined. Fold in the diced apples.
Heat the oil: In a deep skillet or pot, heat oil over medium-high heat to about 350°F (175°C).
Fry the fritters: Using a spoon or small scoop, carefully drop spoonfuls of batter into the hot oil. Fry for 2-3 minutes per side, or until golden brown. Use a slotted spoon to transfer the fritters to a paper towel-lined plate to drain excess oil.
Coat in cinnamon sugar: While the fritters are still warm, toss them in a mixture of sugar and cinnamon until fully coated.
Serve: Enjoy warm, with or without a side of vanilla glaze for dipping!
