
Ingredients:
4 cod fillets (about 6 oz each)
2 tablespoons olive oil
Salt and pepper to taste
4 tablespoons unsalted butter
2 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1 tablespoon fresh thyme, chopped
1 tablespoon lemon juice
Directions:
Season the cod: Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
Sear the cod: Heat olive oil in a large skillet over medium-high heat. Add the cod fillets and cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove the fillets from the skillet and set aside.
Make the herb butter sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant. Stir in the parsley, thyme, and lemon juice.
Serve: Pour the herb butter sauce over the seared cod fillets. Garnish with extra parsley and serve with your favorite side dishes, like roasted vegetables or mashed potatoes.
