10 fresh jalapeños, chopped
2 cloves garlic, minced
1/2 cup white vinegar
1/4 cup water
1/4 cup cilantro, chopped
1 tablespoon lime juice
1 teaspoon salt
1 teaspoon sugar
Directions:
Prepare the jalapeños: In a small saucepan, combine the chopped jalapeños, garlic, vinegar, water, and salt. Bring to a simmer over medium heat and cook for 10 minutes.
Blend: Remove the mixture from heat and allow it to cool slightly. Transfer to a blender, add the cilantro, lime juice, and sugar, and blend until smooth.
Strain (optional): If you prefer a smoother hot sauce, strain the mixture through a fine-mesh sieve to remove any solids.
Store: Pour the sauce into a clean bottle or jar. Refrigerate for up to 2 weeks.
