
Ingredients:
8 lasagna noodles, cooked
2 cups mushrooms, sliced
3 cups fresh spinach
1 cup ricotta cheese
1/2 cup mozzarella cheese, shredded
1/4 cup Parmesan cheese
2 cloves garlic, minced
1 jar of marinara sauce (about 2 cups)
1 tablespoon olive oil
Salt and pepper to taste
Fresh parsley for garnish
Directions:
Cook the noodles: Boil the lasagna noodles according to the package instructions. Drain and set aside.
Sauté mushrooms and spinach: Heat olive oil in a pan and sauté the garlic until fragrant. Add mushrooms and cook until softened. Add spinach and cook until wilted. Season with salt and pepper.
Prepare the filling: In a bowl, mix the ricotta cheese, half of the mozzarella, and Parmesan cheese with the cooked mushroom-spinach mixture.
Assemble the rolls: Spread a thin layer of marinara sauce on the bottom of a baking dish. Lay out each lasagna noodle and spread the filling mixture evenly across each noodle. Roll each one up and place them seam-side down in the baking dish.
Top with sauce and cheese: Pour the remaining marinara sauce over the lasagna rolls and top with the rest of the mozzarella cheese.
Bake: Preheat the oven to 375°F (190°C) and bake the lasagna rolls for 20-25 minutes, until the cheese is bubbly and golden.
Garnish and serve: Garnish with fresh parsley and serve hot.
