Garlic Parmesan Roasted Carrots

Ingredients:
1 lb baby carrots or whole carrots, peeled
2 tbsp olive oil
3 cloves garlic, minced
1/3 cup grated Parmesan cheese
1/2 tsp paprika
Salt and pepper to taste
Fresh parsley for garnish

Directions:
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
Toss the carrots in olive oil, minced garlic, paprika, salt, and pepper until evenly coated.
Arrange the carrots in a single layer on the prepared baking sheet.
Roast the carrots in the preheated oven for 25-30 minutes, or until tender and slightly caramelized.
Add Parmesan: Sprinkle the roasted carrots with Parmesan cheese during the last 5 minutes of roasting.
Serve: Garnish with fresh parsley before serving and enjoy hot!
