Directions:
Mix the ingredients: In a mason jar or bowl, combine oats, pumpkin puree, almond milk, chia seeds, maple syrup, pumpkin pie spice, cinnamon, and vanilla extract. Stir until well combined.
Refrigerate: Cover and refrigerate overnight or for at least 4 hours to let the oats absorb the flavors.
Serve: In the morning, stir the oats and add your favorite toppings, such as whipped cream, pecans, and a sprinkle of cinnamon.
