
Ingredients:
12 oz spaghetti or your favorite pasta
1 cup cherry tomatoes, halved
1 cup vegetable or chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 tbsp olive oil
3 garlic cloves, minced
1/2 tsp red pepper flakes (optional)
2 cups spinach
Fresh basil for garnish
Salt and pepper to taste
Directions:
Sauté garlic and tomatoes: In a large pot, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add halved cherry tomatoes and cook until softened (about 3-4 minutes).
Add pasta and liquids: Add the pasta, vegetable or chicken broth, and heavy cream to the pot. Stir well to combine. Bring to a simmer and cook, stirring occasionally, until the pasta is al dente and the sauce has thickened (about 10-12 minutes).
Add spinach and Parmesan: Stir in the spinach and Parmesan cheese. Continue cooking for another 2 minutes until the spinach wilts and the cheese melts into the sauce.
Season and serve: Season with salt, pepper, and red pepper flakes if desired. Garnish with fresh basil and extra Parmesan before serving.
