High Protein Egg Salad

Ingredients:
6 hard-boiled eggs, chopped
1 cup baby arugula or spinach
1/2 cup roasted beets, diced
1/4 cup green peas
2 tbsp olive oil
1 tbsp Dijon mustard
1 tbsp apple cider vinegar
1/2 tsp paprika
Salt and pepper to taste
Fresh parsley for garnish

Directions:
Prepare eggs: Peel and chop the hard-boiled eggs and set aside.
Make the dressing: In a small bowl, whisk together olive oil, Dijon mustard, apple cider vinegar, paprika, salt, and pepper.
Assemble the salad: In a large bowl, combine arugula or spinach, roasted beets, green peas, and chopped eggs. Drizzle the dressing over the salad and gently toss to coat.
Serve: Garnish with fresh parsley and a sprinkle of paprika. Enjoy as a high-protein meal or side dish!
