High Protein Egg Salad

Ingredients:
6 hard-boiled eggs, chopped
2 tbsp Greek yogurt or mayonnaise
1 tbsp Dijon mustard
1/4 tsp paprika
1/4 tsp garlic powder
2 green onions, chopped
Salt and pepper to taste
Fresh mixed greens (optional for serving)
Chopped tomatoes (optional for serving)

Directions:
Prepare the eggs: Peel and chop the hard-boiled eggs, then place them in a mixing bowl.
Make the dressing: In a small bowl, combine Greek yogurt or mayonnaise, Dijon mustard, paprika, garlic powder, salt, and pepper.
Combine ingredients: Add the dressing to the chopped eggs and mix until well combined.
Garnish: Sprinkle with chopped green onions and an extra dash of paprika for color.
Serve: Serve over a bed of fresh mixed greens and chopped tomatoes, if desired.
