2 medium acorn squash, halved and seeded
1 lb ground sausage
1 apple, peeled and diced
1/2 cup onion, chopped
1/2 cup celery, chopped
1/2 tsp dried thyme
1/2 tsp dried rosemary
1/4 cup Parmesan cheese, grated
2 tbsp olive oil
Salt and pepper to taste
Directions:
Preheat oven: Preheat your oven to 400°F (200°C). Drizzle olive oil over the acorn squash halves and season with salt and pepper. Place them cut side down on a baking sheet and roast for 30-35 minutes, until tender.
Cook sausage: In a large skillet, cook the sausage over medium heat until browned and crumbled. Add chopped onion, celery, and diced apple, cooking until softened (about 5-7 minutes).
Season: Stir in thyme, rosemary, salt, and pepper. Remove from heat and mix in the grated Parmesan cheese.
Stuff the squash: Remove the roasted squash from the oven and turn them over. Fill each half with the sausage and apple mixture.
Bake again: Return the stuffed squash to the oven and bake for an additional 10-15 minutes until golden and heated through.
Serve: Garnish with fresh herbs like rosemary, and serve warm.
