
Ingredients:
For the Meatballs:
1 lb ground chicken
1/4 cup breadcrumbs
1 egg
1/4 cup Parmesan cheese, grated
1 garlic clove, minced
1 tbsp fresh parsley, chopped
Salt and pepper to taste
Olive oil for cooking
For the Ranch Sauce:
1/2 cup ranch dressing
1/2 cup sour cream
1/4 cup chicken broth
1 tsp garlic powder
1 tsp onion powder
Fresh parsley for garnish
Directions:
Make the meatballs: In a large bowl, combine ground chicken, breadcrumbs, egg, Parmesan, minced garlic, parsley, salt, and pepper. Mix until well combined. Form the mixture into small meatballs.
Cook the meatballs: Heat olive oil in a skillet over medium heat. Add the meatballs and cook, turning occasionally, until they are golden brown and cooked through (about 10 minutes). Remove and set aside.
Prepare the sauce: In the same skillet, whisk together ranch dressing, sour cream, chicken broth, garlic powder, and onion powder. Simmer the sauce for 3-4 minutes until heated through and slightly thickened.
Combine: Add the cooked meatballs back to the skillet, coating them with the creamy ranch sauce.
Serve: Serve the chicken meatballs with mashed potatoes or your choice of side, drizzling extra sauce over the top. Garnish with fresh parsley.
