1 lb salmon, cut into cubes
1 tbsp olive oil
2 tbsp soy sauce
2 tbsp honey
1 tbsp rice vinegar
1 tbsp sriracha (optional)
1 tsp sesame oil
2 green onions, chopped
1 tbsp sesame seeds
1 cucumber, sliced
1 avocado, sliced
Steamed white rice (for serving)
Steamed broccoli (for serving)
Directions:
Prepare the sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, sriracha (if using), and sesame oil. Set aside.
Cook the salmon: Heat olive oil in a skillet over medium-high heat. Add the salmon cubes, cooking for 2-3 minutes per side until they are crispy and golden brown.
Add the sauce: Pour the prepared sauce over the salmon cubes and cook for an additional 1-2 minutes until the sauce thickens and coats the salmon.
Assemble the bowl: In serving bowls, add steamed white rice, salmon, sliced cucumber, avocado, and steamed broccoli.
Garnish: Top with chopped green onions and sesame seeds. Serve immediately.
