Crispy Herb Roasted Potatoes

Ingredients:
1.5 lbs baby potatoes, halved
2 tbsp olive oil
2 cloves garlic, minced
1 tsp dried thyme (or fresh sprigs)
1 tsp dried rosemary
1/2 cup grated Parmesan cheese (optional)
Salt and pepper to taste

Instructions:
Preheat the oven: Set the oven to 400°F (200°C).
Prepare the potatoes: Place halved potatoes in a large bowl. Add olive oil, garlic, thyme, rosemary, salt, and pepper. Toss until evenly coated.
Arrange on a baking sheet: Place the potatoes cut-side down on a baking sheet for the crispiest texture. Optionally, sprinkle Parmesan over the top.
Roast the potatoes: Roast in the preheated oven for 25-30 minutes or until golden brown and crispy.
Serve hot: Garnish with extra herbs if desired, and enjoy!
