Whipped Cottage Cheese and Marinated Tomatoes

Ingredients:
2 cups cottage cheese
1/4 cup olive oil
1 pint cherry tomatoes (mix of red and yellow)
1 clove garlic, minced
1 tbsp balsamic vinegar
Fresh basil leaves, chopped
Salt and pepper to taste
Optional: Red pepper flakes for heat

Instructions:
Whip the cottage cheese: In a food processor, blend cottage cheese and 2 tbsp olive oil until smooth and creamy. Set aside in a bowl.
Marinate the tomatoes: In a small bowl, mix cherry tomatoes, garlic, 2 tbsp olive oil, balsamic vinegar, salt, and pepper. Let marinate for at least 15 minutes.
Assemble: Spread whipped cottage cheese in a serving bowl. Top with marinated tomatoes and drizzle any remaining marinade over.
Garnish: Add fresh basil leaves and optional red pepper flakes for extra flavor.
Serve: Serve with crackers, toasted bread, or veggies as a dip.
