
Ingredients:
1 sheet puff pastry (thawed)
1 zucchini, sliced
1 yellow squash, sliced
1/2 cup cherry tomatoes, halved
1/4 cup Kalamata olives, pitted and halved
2 tbsp olive oil
1 tsp dried oregano
Salt and pepper to taste
1/4 cup crumbled feta cheese
Fresh thyme for garnish
Instructions:
Preheat the Oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Prepare the Veggies: In a bowl, toss zucchini, squash, cherry tomatoes, and olives with olive oil, oregano, salt, and pepper.
Roll Out the Pastry: Roll out the puff pastry onto the baking sheet. Lightly score a 1-inch border around the edge of the pastry (without cutting all the way through).
Assemble the Galette: Arrange the seasoned vegetables inside the scored border. Sprinkle with crumbled feta.
Bake: Bake for about 20-25 minutes, or until the pastry is golden and the veggies are tender.
Serve: Garnish with fresh thyme and serve warm.
