4 ears of corn, husked
1/4 cup mayonnaise
1/4 cup sour cream
1/2 cup cotija cheese, crumbled
1 tsp chili powder
1/2 tsp smoked paprika
1 tbsp lime juice

1 tbsp butter, melted (optional)

Directions:
Grill or boil the corn until tender (about 8-10 minutes). If grilling, ensure you rotate the corn to get an even char.
In a small bowl, mix together the mayonnaise, sour cream, lime juice, and chili powder.
Once the corn is cooked, brush or spread the mayo mixture evenly over each ear of corn.
Sprinkle generously with cotija cheese, smoked paprika, and chopped cilantro.
Optional: Drizzle with melted butter for extra richness.
Serve with lime wedges for an extra tangy flavor.
