
Ingredients:
1 lb ground beef (or Italian sausage)
1 small onion, diced
3 cloves garlic, minced
4 cups chicken broth
2 cups marinara sauce
1 can (14 oz) diced tomatoes
1 tbsp Italian seasoning
8 oz lasagna noodles, broken into pieces
1/2 cup ricotta cheese
1 cup mozzarella cheese, shredded
1/4 cup Parmesan cheese, grated
Fresh basil for garnish
Salt and pepper to taste
Directions:
In a large pot, brown the ground beef with diced onion and minced garlic over medium heat until fully cooked. Drain any excess fat.
Add the chicken broth, marinara sauce, diced tomatoes, and Italian seasoning. Stir to combine and bring to a boil.
Stir in the broken lasagna noodles. Reduce heat and simmer for 10-12 minutes, stirring occasionally, until the noodles are tender.
In a small bowl, mix the ricotta cheese with a pinch of salt and pepper.
Once the noodles are cooked, remove the soup from heat. Stir in the mozzarella cheese and dollop the ricotta mixture on top.
Garnish with grated Parmesan, fresh basil, and serve hot.
