Ingredients:
2 large chicken breasts, cut into bite-sized pieces
12 slices of bacon, cut in half
4-5 jalapeños, sliced
1 tsp garlic powder
1 tsp smoked paprika
1 tbsp olive oil
Salt and pepper to taste
Toothpicks for securing
Directions:
Preheat the oven to 400°F (200°C) or preheat your grill for medium-high heat.
In a large bowl, toss the chicken pieces with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
Take a slice of bacon and wrap it around a chicken piece, securing it with a toothpick. Add a slice of jalapeño on top of each bite, using the toothpick to hold it in place.
Place the bacon-wrapped chicken bites on a baking sheet (or grill them) and cook for 20-25 minutes, flipping halfway through, until the bacon is crispy and the chicken is fully cooked.
Garnish with extra jalapeño slices for an added kick, and serve hot.
