Maple Pecan Crusted Salmon

Ingredients:
4 salmon fillets (about 6 oz each)
1/2 cup pecans, finely chopped
1/4 cup breadcrumbs
2 tbsp maple syrup
2 tbsp Dijon mustard
1 tbsp olive oil
1/2 tsp garlic powder
Salt and pepper to taste
Fresh rosemary for garnish (optional)

Directions:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a small bowl, whisk together maple syrup, Dijon mustard, olive oil, garlic powder, salt, and pepper.
In another bowl, mix chopped pecans and breadcrumbs.
Brush the top of each salmon fillet with the maple-Dijon mixture, then press the pecan-breadcrumb mixture onto the top of each fillet to form a crust.
Place the salmon fillets on the prepared baking sheet and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Garnish with fresh rosemary if desired, and serve immediately.
