Pepper Jack and Bacon Stuffed Chicken Breasts

Ingredients:
4 boneless, skinless chicken breasts
4 slices pepper jack cheese
6 slices bacon, cooked and crumbled
1 tsp garlic powder
1 tsp smoked paprika
1 tbsp olive oil
Salt and pepper to taste
Fresh parsley for garnish

Directions:
Preheat your oven to 375°F (190°C).
Slice each chicken breast lengthwise to create a pocket, being careful not to cut all the way through.
Season the inside and outside of the chicken breasts with garlic powder, smoked paprika, salt, and pepper.
Stuff each chicken breast with a slice of pepper jack cheese and crumbled bacon. Use toothpicks to secure the edges if necessary.
In an oven-safe skillet, heat olive oil over medium heat. Sear the stuffed chicken breasts on both sides until golden brown, about 3-4 minutes per side.
Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Garnish with fresh parsley and extra crumbled bacon before serving.
