Carrot Cake Oatmeal Cream Pies

Ingredients:
For the Cookies
1 cup rolled oats
1 cup whole wheat flour
1/2 cup grated carrots
1/2 cup brown sugar
1/2 cup unsweetened applesauce
1/4 cup coconut oil, melted
1 tsp vanilla extract
1/2 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp baking powder
1/4 tsp baking soda
Pinch of salt
For the Cream Filling
1/2 cup cream cheese, softened
1/4 cup plain Greek yogurt
1/4 cup powdered sugar
1/2 tsp vanilla extract

Directions:
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Make the Cookies: In a large bowl, combine the rolled oats, whole wheat flour, grated carrots, brown sugar, cinnamon, ginger, baking powder, baking soda, and salt. Stir in the applesauce, coconut oil, and vanilla extract until the mixture is fully combined.
Form the Cookies: Drop spoonfuls of the dough onto the prepared baking sheet and flatten them slightly. Bake for 10-12 minutes, or until the cookies are golden brown around the edges. Let them cool completely.
Make the Cream Filling: In a medium bowl, whisk together the softened cream cheese, Greek yogurt, powdered sugar, and vanilla extract until smooth and creamy.
Assemble the Cream Pies: Spread a generous amount of the cream filling onto one cookie and top with another cookie to create a sandwich. Repeat with the remaining cookies.
