
Ingredients
1 small head of cabbage, chopped
2 carrots, sliced
2 celery stalks, diced
1 onion, chopped
3 cloves garlic, minced
6 cups vegetable or chicken broth
1 can (14.5 ounces) diced tomatoes
1 teaspoon dried thyme
1 bay leaf
Salt and pepper to taste
Fresh parsley for garnish
Directions
Sauté the Vegetables
In a large pot, heat a bit of oil over medium heat. Add the chopped onion, celery, carrots, and garlic. Cook for 5 to 6 minutes until softened.
Add Cabbage and Broth
Stir in the chopped cabbage, diced tomatoes, and broth. Add the thyme, bay leaf, salt, and pepper. Bring to a boil.
Simmer the Soup
Reduce the heat and let the soup simmer for 25 to 30 minutes until the cabbage is tender.
Finish and Serve
Remove the bay leaf, taste, and adjust the seasoning if needed. Garnish with fresh parsley before serving.
