
Ingredients
4 medium zucchini, halved lengthwise
2 cups cooked chicken, shredded
1/2 cup buffalo sauce
1/2 cup shredded cheddar cheese
1/4 cup ranch dressing
2 green onions, chopped
Salt and pepper to taste
Directions
Prep the Zucchini
Preheat your oven to 375 degrees Fahrenheit or 190 degrees Celsius.
Scoop out the center of each zucchini half to form boats, leaving about one quarter inch of zucchini on all sides. Season with salt and pepper.
Mix the Filling
In a bowl, combine the shredded chicken with the buffalo sauce and mix until evenly coated.
Fill and Bake
Place the zucchini boats on a baking sheet. Spoon the buffalo chicken mixture into each boat and top with shredded cheddar cheese.
Bake for 20 to 25 minutes, or until the zucchini is tender and the cheese is melted.
Garnish and Serve
Drizzle with ranch dressing and sprinkle with chopped green onions before serving.
