
Ingredients
For the Chicken Marinade
4 boneless, skinless chicken breasts
2 tablespoons olive oil
2 tablespoons lemon juice
3 cloves garlic, minced
1 teaspoon dried oregano
Salt and pepper to taste
For the Salad
4 cups mixed salad greens
1 cucumber, sliced
1 cup cherry tomatoes, halved
1/2 red onion, thinly sliced
Fresh parsley for garnish
For the Tzatziki Sauce
1 cup Greek yogurt
1/2 cucumber, grated and squeezed of excess water
1 tablespoon olive oil
1 tablespoon lemon juice
1 garlic clove, minced
Salt and pepper to taste
Fresh dill or mint (optional)
Directions
Marinate the Chicken
In a bowl, mix the olive oil, lemon juice, garlic, oregano, salt, and pepper. Add the chicken breasts and coat well. Let marinate for at least 30 minutes.
Grill the Chicken
Preheat the grill to medium-high heat. Grill the chicken for 6 to 7 minutes on each side, or until fully cooked. Set aside and let rest before slicing.
Prepare the Tzatziki Sauce
In a bowl, combine the Greek yogurt, grated cucumber, olive oil, lemon juice, garlic, salt, pepper, and herbs. Mix well and refrigerate until serving.
Assemble the Salad
On a serving platter, arrange the salad greens, cucumber slices, cherry tomatoes, and red onion. Top with grilled chicken slices.
Serve
Drizzle with the homemade tzatziki sauce and garnish with fresh parsley. Serve immediately.
