
Ingredients
For the Chicken:
4 boneless, skinless chicken breasts
2 tablespoons olive oil
2 tablespoons lime juice
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper to taste
Fresh cilantro (for garnish)
Lime wedges (for serving)
For the Cilantro Rice:
1 cup long-grain rice
2 cups chicken broth
1 tablespoon lime juice
ΒΌ cup fresh cilantro, chopped
Salt and pepper to taste
Directions
Marinate chicken: Mix olive oil, lime juice, garlic, cumin, chili powder, salt, and pepper. Coat chicken and let marinate 15 minutes.
Cook chicken: Heat skillet over medium. Sear chicken 6-7 minutes per side until golden and cooked through. Remove and set aside.
Make rice: In same skillet, add rice and broth. Simmer covered 15 minutes until rice is tender and liquid absorbed.
Finish rice: Stir in lime juice and cilantro. Season with salt and pepper.
Serve: Return chicken to skillet over rice. Garnish with cilantro and lime wedges.
