Crispy Parmesan Herb Roasted Potatoes

Ingredients

500 grams baby potatoes, halved

3 tablespoons olive oil

3 cloves garlic, minced

1/4 cup grated Parmesan cheese

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

Fresh parsley, chopped for garnish

Directions

Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit).

Prepare the potatoes. Toss the halved potatoes with olive oil, garlic, thyme, rosemary, salt, and pepper.

Roast. Spread the potatoes on a baking sheet with the cut side down. Roast for 25 to 30 minutes until golden brown and crispy.

Add Parmesan. Sprinkle the grated Parmesan over the potatoes during the last 5 minutes of roasting.

Garnish and serve. Remove from the oven, garnish with fresh parsley, and enjoy.
