Garlic Butter Pork Chops with Cheesy Potato Bake

Ingredients

For the Pork Chops:

4 bone-in pork chops

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

Fresh parsley, chopped for garnish

For the Cheesy Potato Bake:

4 large potatoes, thinly sliced

2 cups shredded cheddar cheese

1/2 cup heavy cream

2 tablespoons butter

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Directions

Preheat the oven: Set your oven to 190°C or 375°F.

Prepare the cheesy potato bake: In a greased baking dish, layer the thinly sliced potatoes. Pour the heavy cream over the potatoes, season with salt and pepper, and sprinkle with cheddar cheese and Parmesan. Dot with butter on top. Bake for 30 to 40 minutes, until golden and bubbly.

Cook the pork chops: While the potatoes bake, season the pork chops with salt, pepper, thyme, and rosemary. In a large skillet, melt butter over medium heat and add the minced garlic. Sear the pork chops for 3 to 4 minutes per side, until browned and cooked through.

Combine and finish: Remove the pork chops from the skillet and place them on top of the cheesy potato bake. Garnish with fresh parsley and serve hot.
