Cheesy Ground Beef and Potato Skillet

Ingredients

1 pound ground beef

4 medium potatoes, diced

1 bell pepper, diced (any color)

1 onion, chopped

1 cup shredded cheddar cheese

1/2 cup heavy cream

2 teaspoons smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Directions

In a large skillet over medium heat, cook the diced potatoes with a drizzle of oil, stirring occasionally, until golden and tender, about 10 minutes. Remove and set aside.

In the same skillet, cook the ground beef and onions until the beef is browned and the onions are softened. Drain excess fat if necessary.

Add the bell pepper and cook for another 3 to 4 minutes, until slightly softened.

Return the cooked potatoes to the skillet. Season with smoked paprika, garlic powder, salt, and pepper. Stir everything together.

Pour in the heavy cream and sprinkle shredded cheddar cheese evenly over the top. Let the cheese melt and become creamy, about 3 minutes.

Garnish with chopped fresh parsley and serve hot.
