Cheesy Beef and Rice Casserole

Ingredients

1 pound ground beef

1 small onion, chopped

2 cups cooked white rice

1 and 1/2 cups shredded cheddar cheese, divided

1 can (10.5 ounces) cream of mushroom soup

1/2 cup milk

Salt and pepper to taste

Fresh thyme or parsley for garnish (optional)

Directions

Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).

In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned. Drain any excess fat and season with salt and pepper.

In a large bowl, combine the beef mixture, cooked rice, cream of mushroom soup, milk, and 1 cup of shredded cheddar cheese. Stir until well combined.

Transfer the mixture to a baking dish and spread it out evenly. Sprinkle the remaining 1/2 cup of cheddar cheese on top.

Bake for 20 to 25 minutes, or until the cheese is melted and bubbly.

Garnish with fresh thyme or parsley if desired, and serve hot.
