Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken

Ingredients

4 boneless, skinless chicken breasts

Salt and pepper, to taste

1 teaspoon Italian seasoning

1 tablespoon olive oil

1 cup fresh spinach

1/2 cup roasted red peppers, sliced

4 slices mozzarella cheese (or shredded mozzarella)

For the Marinade

2 tablespoons olive oil

2 cloves garlic, minced

1/2 teaspoon crushed red pepper flakes (optional)

1 tablespoon balsamic vinegar

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken
Preheat the oven to 375°F (190°C). Season the chicken breasts with salt, pepper, and Italian seasoning. Cut a pocket into each chicken breast for stuffing.

Sauté the Filling
Heat 1 tablespoon of olive oil in a pan over medium heat. Add the spinach and cook until wilted. Stir in the roasted red peppers and mix well.

Stuff the Chicken
Place one slice of mozzarella cheese inside each chicken breast, followed by a generous portion of the spinach and red pepper mixture. Secure with toothpicks if necessary.

Marinate the Chicken
In a small bowl, combine the olive oil, minced garlic, crushed red pepper flakes, and balsamic vinegar. Brush this mixture over the stuffed chicken breasts.

Bake
Place the stuffed chicken in a baking dish and bake for 25 to 30 minutes, or until the chicken is fully cooked and the cheese has melted.

Serve
Garnish with chopped parsley. Serve hot with a side of roasted vegetables or a fresh salad.
