Ricotta Spinach Quiche

Ingredients

1 pie crust (store-bought or homemade)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

3/4 cup milk

3 large eggs

2 cups fresh spinach, chopped (or 1 cup frozen, thawed, and drained)

1/4 cup grated Parmesan cheese

Salt and pepper, to taste

A pinch of nutmeg (optional)

Instructions

Preheat Oven
Preheat the oven to 375°F (190°C). If using a store-bought pie crust, follow the package instructions for pre-baking.

Prepare Filling
In a large bowl, whisk together the ricotta, mozzarella, milk, and eggs until smooth. Stir in the spinach and Parmesan, then season with salt, pepper, and nutmeg if using.

Fill the Crust
Pour the mixture into the pre-baked crust and spread it evenly.

Bake the Quiche
Bake for 35 to 40 minutes, or until the center is set and the top is golden brown.

Cool and Serve
Let the quiche cool for a few minutes before slicing. Serve warm.
