
You will need:
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup buttermilk
- 1/4 cup orange juice
- 1/4 cup melted butter
- 1 egg
- 1 tsp orange zest
- 1 cup chopped rhubarb
Directions:
- Preheat Oven: Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- Mix Dry Ingredients: In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Combine Wet Ingredients: In another bowl, whisk together buttermilk, orange juice, melted butter, egg, and orange zest.
- Combine and Fold: Add wet ingredients to dry ingredients and stir until just combined. Fold in chopped rhubarb.
- Bake: Spoon batter into muffin cups, filling each about 3/4 full. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
