Rhubarb Orange Muffins

You will need:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup buttermilk
  • 1/4 cup orange juice
  • 1/4 cup melted butter
  • 1 egg
  • 1 tsp orange zest
  • 1 cup chopped rhubarb

Directions:

  1. Preheat Oven: Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients: In another bowl, whisk together buttermilk, orange juice, melted butter, egg, and orange zest.
  4. Combine and Fold: Add wet ingredients to dry ingredients and stir until just combined. Fold in chopped rhubarb.
  5. Bake: Spoon batter into muffin cups, filling each about 3/4 full. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
