
Ingredients:
1 lb ground beef
1 red bell pepper (sliced)
1 yellow bell pepper (sliced)
1 small red onion (sliced)
1 cup shredded cheddar cheese
1 packet fajita seasoning
2 tbsp olive oil
1 cup salsa
Fresh cilantro (for garnish)
Directions:
1 Preheat the oven to 375°F (190°C).
2 In a skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
3 Stir in fajita seasoning and 1/4 cup of water. Cook for another 2-3 minutes.
4 Add sliced peppers and onions to the beef mixture. Cook for 4-5 minutes until vegetables are tender.
5 Transfer the mixture to a baking dish and spread salsa evenly over the top.
6 Sprinkle with shredded cheddar cheese and bake for 15 minutes, or until the cheese is melted and bubbly.
7 Garnish with fresh cilantro and serve with tortillas or over rice!
