4 slices of bread (sourdough, wheat, or your choice)
2 tablespoons unsalted butter, softened
1/4 cup crumbled feta cheese
1/2 cup shredded mozzarella cheese
1 cup fresh spinach, chopped
1 clove garlic, minced
1 tablespoon olive oil
Pinch of red pepper flakes (optional)
Directions:
Prepare the Spinach Mixture: In a skillet over medium heat, add the olive oil and minced garlic. Sauté for about 1 minute until fragrant. Add the chopped spinach and a pinch of red pepper flakes (if using). Cook until the spinach is wilted, about 2-3 minutes. Remove from heat.
Assemble the Sandwiches: Spread butter on one side of each slice of bread. On the non-buttered side of two slices, layer the spinach mixture, crumbled feta, and shredded mozzarella. Top with the remaining bread slices, buttered side out.
Grill the Sandwiches: Heat a skillet over medium heat. Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
Serve: Remove from the skillet, slice in half, and serve hot.
