Sweet & Spicy Grilled Chicken Pineapple Skewers

Ingredients:
1 1/2 pounds chicken breasts, cut into 1-inch cubes
2 cups fresh pineapple, cut into chunks
1 red bell pepper, cut into chunks
1 red onion, cut into chunks
1/4 cup soy sauce
2 tablespoons honey
2 tablespoons sriracha sauce
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon ground ginger
1/2 teaspoon black pepper
Skewers (if using wooden skewers, soak in water for 30 minutes)

Directions:
Make the Marinade: In a bowl, whisk together soy sauce, honey, sriracha sauce, olive oil, minced garlic, ground ginger, and black pepper.
Marinate the Chicken: Add the chicken cubes to the marinade, tossing to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours.
Assemble the Skewers: Thread the marinated chicken, pineapple chunks, red bell pepper, and red onion onto the skewers, alternating ingredients.
Preheat the Grill: Preheat your grill to medium-high heat.
Grill the Skewers: Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Serve: Remove from the grill and serve hot. Enjoy the sweet and spicy flavors with the juicy pineapple!
