
Ingredients:
1 lb shrimp, peeled and deveined
2 cups broccoli florets
4 cloves garlic, minced
2 tbsp olive oil
1/4 cup chicken broth
2 tbsp soy sauce (low sodium)
1 tbsp honey
1 tbsp cornstarch
1/4 cup water
Salt and pepper to taste
Directions:
In a small bowl, mix the chicken broth, soy sauce, honey, cornstarch, and water until smooth. Set aside.
Heat olive oil in a large skillet over medium heat.
Add minced garlic and sauté for about 1 minute until fragrant.
Add the shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes on each side until pink and cooked through. Remove shrimp from the skillet and set aside.
In the same skillet, add the broccoli florets and a splash of water. Cover and steam for 3-4 minutes until broccoli is tender but still crisp.
Return the shrimp to the skillet. Stir in the garlic sauce mixture, and cook for 2-3 minutes until the sauce thickens and coats the shrimp and broccoli evenly.
Serve hot over rice or your favorite grain.
