Cheddar Apple Sandwich

Ingredients:
4 slices whole grain or sourdough bread
2 Tbsp Dijon mustard
4 oz sharp cheddar cheese, thinly sliced
1 medium apple, thinly sliced (Honeycrisp or Granny Smith works well)
1/2 cup baby arugula
1 Tbsp unsalted butter

Directions:
Assemble the Sandwiches: Spread Dijon mustard on one side of each slice of bread. Layer the cheese slices evenly on two of the bread slices. Top with apple slices and arugula, then place the other slices of bread on top, mustard side down.
Grill the Sandwiches: Heat a large skillet over medium heat. Add the butter and let it melt. Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
Serve: Remove the sandwiches from the skillet, slice them in half, and serve warm.
