1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, room temperature
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup creamy peanut butter
1 large egg
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips

In a medium bowl, whisk together flour, baking soda, and salt.
In a large bowl, beat together butter, granulated sugar, and brown sugar until creamy and smooth.
Add peanut butter, egg, and vanilla extract, and mix until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Stir in the chocolate chips until evenly distributed throughout the dough.
Press the cookie dough evenly into the prepared pie dish.
Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the center is just set.
Allow the cookie pie to cool in the dish before slicing and serving.
