
Ingredients:
1 (12-16 oz) kielbasa sausage
8 oz pineapple chunks (about 1 cup)
8 slices turkey bacon (or regular bacon)
1/4 cup brown sugar
1/4 cup pineapple juice
1/4 cup barbecue sauce

Directions:
Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or aluminum foil.
Prepare the Kielbasa: Slice the kielbasa into 1/2-inch thick rounds, but don’t cut all the way through. Make these slices about 1/4-inch apart, creating a hasselback effect.
Stuff with Pineapple: Insert a pineapple chunk into each slice of the kielbasa.
Wrap with Bacon: Cut each slice of bacon in half. Wrap each stuffed kielbasa slice with half a bacon strip and secure with a toothpick.
Make the Glaze: In a small bowl, mix together the brown sugar, pineapple juice, and barbecue sauce until well combined.
Bake: Place the wrapped kielbasa bites on the prepared baking sheet. Brush each bite with the glaze. Bake for 20-25 minutes, basting with additional glaze halfway through, until the bacon is crispy and caramelized.
Serve: Remove from the oven and serve warm as a delicious appetizer or snack.
