
Ingredients:
4 medium potatoes, peeled and cut into chunks
1 large onion, peeled and sliced
3 tablespoons olive oil
1 teaspoon dried rosemary
1 teaspoon dried thyme
1/2 teaspoon garlic powder
Salt and pepper, to taste
Directions:
Preheat your oven to 400°F (200°C).
In a large bowl, combine the potatoes and onion.
Drizzle with olive oil and toss to coat.
Sprinkle with rosemary, thyme, garlic powder, salt, and pepper. Toss again to distribute the seasonings evenly.
Spread the potatoes and onions in a single layer on a baking sheet.
Roast in the preheated oven for 30-35 minutes, or until potatoes are tender and golden brown, stirring halfway through.
Serve hot as a delicious side dish!
