
Ingredients:
1 1/2 cups pitted cherries (fresh or frozen)
1/4 cup granulated sugar
1 tablespoon unsalted butter, for greasing
1/2 cup all-purpose flour
1/2 cup almond meal
1/4 teaspoon salt
1/4 teaspoon almond extract
1/2 cup whole milk
1/4 cup heavy cream
3 large eggs
1/2 cup granulated sugar
1 teaspoon vanilla extract
Powdered sugar, for dusting (optional)
Directions:
Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9-inch round baking dish with butter.
Prepare the Cherries: Toss the cherries with 1/4 cup sugar and arrange them evenly in the prepared baking dish.
Make the Batter: In a medium bowl, whisk together flour, almond meal, and salt. In another bowl, whisk together almond extract, milk, cream, eggs, 1/2 cup sugar, and vanilla extract until smooth. Gradually whisk the wet ingredients into the dry ingredients until combined.
Bake: Pour the batter over the cherries in the baking dish. Bake for 35-40 minutes, or until the clafouti is puffed and golden brown and a toothpick inserted into the center comes out clean.
Cool and Serve: Allow the clafouti to cool slightly before dusting with powdered sugar if desired. Serve warm or at room temperature.
