
Ingredients:
- 4 salmon fillets
- 2 tablespoons olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon red curry paste
- 1 can (400g) coconut milk
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 2 cups broccoli florets
- Salt and pepper to taste
- Fresh coriander or parsley , chopped (for garnish)
Cooking Instructions:
- Cook Salmon: Heat olive oil in a pan over medium heat, season salmon with salt and pepper, and sear until golden on both sides. Remove and set aside.
- Prepare Sauce: In the same pan, sauté onion, garlic, and ginger until fragrant. Add red curry paste and stir.
- Simmer Curry: Pour in coconut milk, fish sauce, and lime juice. Simmer for 5 minutes.
- Add Broccoli & Salmon: Add broccoli florets and cook until tender. Return salmon to the pan, spoon sauce over, and heat through.
- Garnish & Serve: Top with fresh coriander or parsley and serve warm.
