Oreo Cookie Cake

Ingredients:
For the Cake:

1 1/2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup vegetable oil
2 large eggs
1 cup buttermilk
1 teaspoon vanilla extract
1 cup crushed Oreo cookies
For the Frosting:
1 cup unsalted butter, softened
3 cups powdered sugar
1/2 cup heavy cream
1 teaspoon vanilla extract
1/2 cup crushed Oreo cookies
For Decoration:
Whole Oreo cookies

Directions:
Prepare the Cake: Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt. In another bowl, mix together oil, eggs, buttermilk, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in crushed Oreo cookies. Divide batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
Prepare the Frosting: In a large bowl, beat softened butter until creamy. Gradually add powdered sugar, alternating with heavy cream, until smooth and fluffy. Stir in vanilla extract and crushed Oreo cookies.
Assemble the Cake: Once the cakes are completely cooled, spread frosting on top of one layer, then place the second layer on top. Frost the top and sides of the cake. Decorate with whole Oreo cookies as desired.
Serve: Chill for 30 minutes before serving to set the frosting.
