
Ingredients:
1 can (15 oz) chickpeas, drained and rinsed
2 tbsp mayonnaise
1 tbsp Dijon mustard
1 tbsp lemon juice
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
1/4 cup chopped celery
1/4 cup chopped red onion
4 slices of bread (whole wheat or your favorite)
Lettuce leaves and tomato slices for serving
Directions:
In a large bowl, mash the chickpeas with a fork until mostly smooth but with some texture.
Add mayonnaise, Dijon mustard, lemon juice, garlic powder, and onion powder. Stir until well combined.
Season the mixture with salt and pepper to taste.
Fold in the chopped celery and red onion.
Spread the chickpea mixture evenly on two slices of bread.
Top with lettuce leaves and tomato slices.
Place the remaining slices of bread on top to make a sandwich.
Cut the sandwiches in half and serve immediately.
